Remove the leaves and stem from the cauliflower head.
Cut the cauliflower into small florets.
Place the florets in a food processor and pulse until rice-like.
Heat olive oil in a skillet over medium heat.
Add minced garlic or onions if desired and sauté until fragrant.
Stir in the cauliflower rice and season with salt and pepper.
Cook for about 5-7 minutes, stirring occasionally.
Remove from heat once tender but not mushy.
Serve warm as a side dish or base for your meal.
