Ingredients

  • 8 oz rotini pasta
  • 1 lb Cajun or andouille sausage sliced
  • 1 cup bell peppers diced
  • 1 cup onion diced
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 tsp Cajun seasoning
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Cook the rotini pasta according to package instructions; drain and set aside.
  • In a large skillet, heat olive oil over medium heat.
  • Add sliced sausage and cook until browned, about 5-7 minutes.
  • Stir in diced onions and bell peppers; sauté until softened, about 5 minutes.
  • Add minced garlic and cook for another 1-2 minutes until fragrant.
  • Pour in chicken broth and bring to a simmer.
  • Mix in heavy cream and Cajun seasoning; stir well.
  • Add the cooked pasta to the skillet, tossing to combine.
  • Season with salt and pepper to taste, adjusting as needed.
  • Garnish with fresh parsley before serving.
