Ingredients

  • 8 oz. noodles
  • 1 cup bell pepper sliced
  • 1 cup carrots julienned
  • 1/2 cup green onions chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  • Boil water in a large pot and add a pinch of salt.
  • Add the noodles and cook according to package instructions until al dente.
  • While the noodles are cooking, chop the vegetables: bell pepper, carrots, and green onions.
  • In a pan, heat a tablespoon of oil over medium heat.
  • Add the chopped vegetables to the pan and sauté for 5-7 minutes.
  • In a bowl, mix soy sauce, sesame oil, and a teaspoon of sugar.
  • Drain the cooked noodles and add them to the sautéed vegetables.
  • Pour the sauce over the noodles and mix well to combine.
  • Cook for an additional 2-3 minutes to heat through.
  • Garnish with fresh cilantro before serving.
