Boil water in a large pot and add a pinch of salt.
Add the noodles and cook according to package instructions until al dente.
While the noodles are cooking, chop the vegetables: bell pepper, carrots, and green onions.
In a pan, heat a tablespoon of oil over medium heat.
Add the chopped vegetables to the pan and sauté for 5-7 minutes.
In a bowl, mix soy sauce, sesame oil, and a teaspoon of sugar.
Drain the cooked noodles and add them to the sautéed vegetables.
Pour the sauce over the noodles and mix well to combine.
Cook for an additional 2-3 minutes to heat through.
Garnish with fresh cilantro before serving.
