Ingredients

  • 1 pound ground beef or turkey
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 4 cups chopped cabbage
  • 1 can 14.5 oz diced tomatoes
  • 4 cups beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onions and sauté until translucent.
  • Stir in minced garlic and cook for another minute.
  • Add ground meat to the pot and cook until browned.
  • Mix in chopped cabbage and cook for about 5 minutes.
  • Pour in diced tomatoes and beef broth, stirring well.
  • Add tomato paste and oregano, mixing thoroughly.
  • Season with salt and pepper to taste.
  • Bring the soup to a boil, then reduce heat to a simmer.
  • Cover and cook for about 25 minutes, until cabbage is tender.
