Ingredients

  • 2 large flour tortillas
  • 1 cup cooked rice
  • 1 cup black beans drained and rinsed
  • 1 cup cooked chicken shredded
  • 1/2 cup shredded cheese
  • 1/2 cup diced tomatoes
  • 1/2 cup chopped lettuce
  • 1/4 cup sour cream
  • 1 avocado sliced
  • Salsa to taste

Instructions

  • Warm the tortillas in a skillet for about 30 seconds on each side.
  • Spread a layer of rice on each tortilla.
  • Add a layer of black beans on top of the rice.
  • Place shredded chicken over the beans evenly.
  • Sprinkle cheese on top of the chicken.
  • Top with diced tomatoes and chopped lettuce.
  • Add slices of avocado and a dollop of sour cream.
  • Drizzle salsa over the top for extra flavor.
  • Carefully fold the sides of the tortilla and roll it up tightly.
