Ingredients

  • 1 cup cooked rice
  • 1 cup black beans drained and rinsed
  • 1 cup corn
  • 1 cup cooked chicken or beef shredded
  • ½ cup salsa
  • ½ avocado sliced
  • ¼ cup shredded cheese
  • 2 tablespoons sour cream
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  • Cook the rice according to package instructions.
  • Prepare your protein (chicken or beef) as desired.
  • Layer the cooked rice at the bottom of a bowl.
  • Add the black beans evenly over the rice.
  • Layer the corn on top of the beans.
  • Place the shredded chicken or beef over the corn.
  • Spoon salsa over the meat.
  • Add sliced avocado on top.
  • Sprinkle shredded cheese over the avocado.
  • Finish with sour cream and garnish with cilantro.
