Ingredients

  • 1 large flour tortilla
  • 2 large eggs
  • 2 slices of cooked bacon or turkey bacon
  • 1/4 cup shredded cheese
  • 1/4 cup fresh spinach
  • 1/4 avocado sliced
  • Salt and pepper to taste
  • Salsa optional

Instructions

  • Gather all your ingredients on a clean surface.
  • In a small bowl, whisk the eggs and season with salt and pepper.
  • Heat a non-stick skillet over medium heat and add the eggs.
  • Cook the eggs until they are scrambled and no longer runny.
  • Warm the tortilla in another skillet for about 30 seconds on each side.
  • Place the scrambled eggs in the center of the tortilla.
  • Add the cooked bacon on top of the eggs.
  • Sprinkle the shredded cheese over the bacon.
  • Layer the fresh spinach and avocado slices on top.
  • Roll the tortilla tightly and slice in half.
