Add cherry tomatoes and cook until they begin to soften, about 3-4 minutes.
Stir in the fresh spinach and cook until wilted.
Drain the pasta and reserve some cooking water.
Add the cooked pasta to the skillet along with the Boursin cheese.
Toss everything together, adding reserved pasta water to reach desired creaminess.
Season with salt and pepper to taste.
Serve hot, garnished with grated Parmesan cheese.
