Ingredients

  • 1 lb ground beef
  • 1 can 10 oz enchilada sauce
  • 1 can 15 oz black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup shredded cheddar cheese
  • 8 corn tortillas
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a skillet, brown the ground beef over medium heat until fully cooked.
  • Drain excess fat and add cumin, garlic powder, salt, and pepper.
  • Stir in the black beans and corn until heated through.
  • Spread a thin layer of enchilada sauce on the bottom of a baking dish.
  • Layer 4 tortillas over the sauce, overlapping them slightly.
  • Spread half of the beef mixture over the tortillas.
  • Sprinkle a layer of cheddar cheese over the beef.
  • Repeat the layers with the remaining tortillas, beef mixture, and top with sauce and cheese.
  • Bake for 30 minutes until cheese is bubbly and golden.
