Ingredients

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • Sea salt to taste
  • 1 cup sour cream
  • 1 cup shredded cheese cheddar, mozzarella
  • 1/2 cup chopped green onions
  • 1/2 cup crispy bacon bits
  • 1 cup steamed broccoli
  • 1/2 cup salsa
  • Butter to taste

Instructions

  • Preheat your oven to 425°F (220°C).
  • Wash and scrub the russet potatoes thoroughly.
  • Dry the potatoes with a towel.
  • Prick each potato several times with a fork.
  • Rub each potato with olive oil and sprinkle with sea salt.
  • Bake the potatoes directly on the oven rack for 45-60 minutes.
  • Remove the potatoes from the oven and let them cool slightly.
  • Cut a slit in the top of each potato and gently squeeze the ends.
  • Set up a toppings bar with all the ingredients.
