Ingredients

  • 2 cups cooked chicken shredded
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 8 small corn or flour tortillas
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 cup lettuce shredded
  • 1 cup tomatoes diced
  • 1/2 cup sour cream
  • Fresh cilantro for garnish

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, mix the shredded chicken with chili powder, cumin, garlic powder, onion powder, paprika, salt, and pepper.
  • Warm the tortillas slightly to make them pliable.
  • Fill each tortilla with a portion of the seasoned chicken mixture.
  • Place the filled tortillas in a baking dish.
  • Sprinkle shredded cheese generously over the top of the tacos.
  • Bake in the preheated oven for 15-20 minutes until the cheese is melted and bubbly.
  • While baking, prepare the toppings: shred lettuce and dice tomatoes.
  • Remove the tacos from the oven and let them cool slightly.
  • Top with lettuce, tomatoes, sour cream, and cilantro before serving.
