Preheat your oven to 350°F (175°C).
Wash and core the apples, leaving the bottom intact.
In a bowl, mix brown sugar, oats, nuts, cinnamon, and nutmeg.
Fill the hollowed apples with the mixture.
Drizzle melted butter over the filled apples.
Place the apples in a baking dish.
Pour apple juice or water into the bottom of the dish.
Cover the dish with aluminum foil.
Bake for 20 minutes covered, then remove foil.
Bake for an additional 10 minutes until apples are tender and golden.
