Wash and peel the russet potatoes.
Cut the potatoes into evenly sized sticks, about 1/4 inch thick.
Soak the potato sticks in cold water for at least 30 minutes.
Drain the potatoes and pat them dry with a clean towel.
Preheat the air fryer to 375°F (190°C) for about 5 minutes.
Toss the potato sticks with olive oil, salt, and optional spices.
Place the fries in the air fryer basket in a single layer.
Cook for 10 minutes, then shake the basket.
Continue cooking for another 10-15 minutes until golden brown.
Remove the fries and serve hot.
